Egg on Fan (Egg and Fan or Sterling Egg Trick) is an effect where a crumpled piece of paper slowly turns into an egg while being juggled on a fan.

Created by Max Sterling for his "Magic of Japan" act at the Maskelyne's Home of Mystery in London (1905).

Other performers known for performing this were Carmo, Tommy Martin and Orson Welles.
